Ingredients

  • 1 bunch radishes (about 8–10), thinly sliced or halved
  • 1 tablespoon olive oil
  • 1 teaspoon butter (optional for richness)
  • 1 small shallot, finely chopped (or ¼ red onion)
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice (or white wine vinegar)
  • Salt and pepper, to taste
  • 1 handful fresh arugula or spinach
  • 1 tablespoon chopped fresh dill or parsley
  • Shaved Parmesan or crumbled goat cheese

Instructions

  1. Heat olive oil (and butter, if using) in a skillet over medium heat. Add radishes and cook for 5–6 minutes, until slightly softened and lightly golden on the edges.
  2. Stir in the shallot and cook for another minute. Add honey and lime juice, tossing everything to coat. Season with salt and pepper.
  3. Remove from heat. Add arugula (or spinach) to the warm skillet just until it begins to wilt. Sprinkle with fresh herbs and cheese.
