Every now and then, a recipe comes along that feels like pure sunshine on a plate. This Sweet Pea & Lemon Ricotta Smash is exactly that — bright, fresh, and irresistibly simple. Whether you're looking for a quick lunch, a pretty brunch dish, or a vibrant appetizer for entertaining, this pea-packed toast is one of those quietly brilliant recipes that delivers big flavor with almost no effort.

At first glance, peas might not seem like the star of a gourmet-inspired dish, but give them the right partners and they shine. The combination of creamy ricotta, zesty lemon, and fresh herbs turns a humble bowl of peas into something that tastes like spring in every bite. The sweetness of the peas pairs beautifully with the richness of the ricotta, while mint and basil bring a cool, aromatic lift. And that squeeze of lemon? It wakes everything up.

One of the best parts of this recipe is its versatility. It works as a snack, a meal, or something special to serve guests. You can mash the mixture as smooth or chunky as you like, depending on whether you want something more rustic or refined. Serve it on lightly toasted sourdough for a perfect balance of creamy and crisp. And if you’re feeling playful, you can dress it up with chili flakes, shaved Parmesan, or microgreens for a restaurant-worthy finish.

It’s also incredibly adaptable. Swap ricotta for whipped feta if you want something tangier, or fold in a spoonful of pesto for an herby twist. You can even make the pea mixture ahead of time and assemble the toasts right before serving — ideal for spring gatherings or easy weekday meals.

This dish is proof that vegetables don’t need to be complicated to be exciting. With just a handful of fresh ingredients, you can create something that feels special, nourishing, and full of life. Sweet Pea & Lemon Ricotta Smash is the kind of recipe that reminds you why simple food can be the most satisfying.
