Ingredients

  • 8 oz spaghetti or pasta of choice
  • 3 large shallots, thinly sliced
  • 2 tablespoon olive oil
  • 2 tablespoon unsalted butter
  • 1 clove garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • ¼ cup grated Parmesan cheese
  • 2 tablespoon chopped fresh parsley

Notes

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve ½ cup pasta water, then drain.
  2. Caramelize the shallots: In a large skillet, heat olive oil and butter over medium heat. Add sliced shallots and cook 10–12 minutes, stirring occasionally, until soft and golden. Add garlic and red pepper flakes; cook 30 seconds more.
  3. Combine pasta and shallots: Toss the drained pasta into the skillet with shallots. Add a splash of reserved pasta water to create a light sauce. Season with salt and pepper.
