These simple roasted artichokes are crisp, lemony, and incredibly easy to make—just olive oil, salt, pepper, and the oven. A perfect no-fuss side dish.

Ingredients

  • 2 medium artichokes
  • 2 tablespoon olive oil
  • 1 lemon, halved
  • Salt and freshly ground black pepper, to taste
  • Optional: 2–3 garlic cloves or a few sprigs of fresh herbs

Instructions

  1. Preheat the oven: Set to 400°F (200°C).
  2. Prep the artichokes: Trim about 1 inch off the top. Remove tough outer leaves and snip any thorny tips. Cut each artichoke in half lengthwise and scoop out the fuzzy choke.
  3. Season: Place the halves cut-side up on a baking sheet. Drizzle generously with olive oil, squeeze half a lemon over the tops, and sprinkle with salt and pepper. Tuck garlic or herbs around the artichokes if using.
  4. Roast: Bake for 25–30 minutes, until the edges are golden and the leaves pull away easily.
  5. Serve: Finish with the remaining lemon juice and enjoy warm.
