Ingredients
- 1 cup hulled pumpkin seeds (pepitas)
- 1 cup granulated sugar
- ½ cup light corn syrup or honey
- 2 tablespoon unsalted butter, melted (or coconut oil for vegan)
- ½ teaspoon baking soda
- ½ teaspoon vanilla extract
- ½ teaspoon sea salt, plus extra for finishing
Instructions
- Preheat the oven to 325°F and line a baking sheet with parchment paper.
- Preheat a pan on the stove over medium heat, then add the pumpkin seeds. Stir often to toast the seeds slightly, about 5 minutes. Transfer to a bowl and set aside.
- In a large, oven-safe saucepan or a 9x13-inch metal baking pan, combine: sugar, corn syrup (or honey), and butter. Stir to combine.
- Place the pan in the oven and bake for 15–20 minutes, stirring every 5 minutes, until the mixture turns deep golden amber.(It will bubble — that’s normal! Keep an eye so it doesn’t darken too much.)
