Ingredients

  • 1 cup hulled pumpkin seeds (pepitas)
  • 1 cup granulated sugar
  • ½ cup light corn syrup or honey
  • 2 tablespoon unsalted butter, melted (or coconut oil for vegan)
  • ½ teaspoon baking soda
  • ½ teaspoon vanilla extract
  • ½ teaspoon sea salt, plus extra for finishing

Instructions

  1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  2. Preheat a pan on the stove over medium heat, then add the pumpkin seeds. Stir often to toast the seeds slightly, about 5 minutes. Transfer to a bowl and set aside.
  3. In a large, oven-safe saucepan or a 9x13-inch metal baking pan, combine: sugar, corn syrup (or honey), and butter. Stir to combine.
  4. Place the pan in the oven and bake for 15–20 minutes, stirring every 5 minutes, until the mixture turns deep golden amber.(It will bubble — that’s normal! Keep an eye so it doesn’t darken too much.)
  5. Remove from the oven carefully (it’s hot!). Quickly stir in the pumpkin seeds, baking soda, and vanilla extract. (The mixture will foam slightly)
  6. Immediately pour or spread the mixture onto the prepared baking sheet.
  7. Used to greased spoon to flatten the mixture out and sprinkle with sea salt.
  8. Let it cool completely (20–30 minutes). Once hardened, break into pieces.
