Ingredients

- ½ cup ricotta cheese
- 2 tablespoon grated Parmesan
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 small garlic clove, minced
- Salt & pepper, to taste
- 1 tablespoon olive oil
Tartlets:
- 4 sheets phyllo dough
- 2 tablespoon melted butter
- Optional garnish: microgreens, pea shoots, or a drizzle of olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Boil peas 2–3 minutes (if fresh), then transfer to ice water. Drain.
- Blend peas with ricotta, Parmesan, lemon zest, lemon juice, garlic, and olive oil until smooth with slight texture.
- Season with salt and pepper.
