Ingredients

  • 1 bunch broccolini, ends trimmed
  • 2 teaspoon sesame oil
  • 1 tablespoon olive oil
  • 1 small shallot, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon white or yellow miso paste
  • 1 tablespoon maple syrup
  • 1 teaspoon soy sauce or tamari
  • ½ teaspoon chili flakes (or to taste)

Instructions

  1. Blanch the broccolini: Bring salted water to a boil. Cook broccolini for 2–3 minutes until bright green and slightly tender. Drain and shock in ice water to stop cooking.
  2. Make the glaze: In a small bowl, whisk together miso, maple syrup, soy sauce, ginger, garlic, and chili flakes.
  3. Sauté: Heat sesame and olive oil in a skillet over medium heat. Add shallots and sauté until golden and crispy. Remove and set aside for garnish.
  4. Glaze the broccolini: In the same skillet, add broccolini and toss with the miso-maple mixture for 3–4 minutes, until lightly caramelized and glossy.
  5. Finish: Plate the broccolini and top with crispy shallots. Serve warm.
