Ingredients

For the Galette:

  • 1 sheet of store-bought puff pastry or pie dough
  • 2 large leeks (white and light green parts only), thinly sliced
  • 1 large tart apple (like Honeycrisp), thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon brown sugar
  • Salt & black pepper, to taste

For the Smoked Almond Cream:

  • ⅓ cup almonds, lightly toasted
  • 2 tablespoon cream cheese
  • 2–3 tablespoon milk (dairy or plant-based)
  • Pinch of smoked paprika
  • Salt, to taste

Optional Garnish:

  • Fresh thyme or microgreens
  • Drizzle of honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the pastry on parchment and shape into a rough circle or rectangle.
  3. Chill in the fridge while preparing the filling.
  4. Heat olive oil in a skillet over medium heat.
  5. Add sliced leeks, smoked paprika, brown sugar, salt, and pepper.
