Ingredients

Stew:

  • 1 tablespoon coconut oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1–2 teaspoon curry powder
  • ½ teaspoon turmeric
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) chickpeas, drained and rinsed
  • 4 cups chopped kale, stems removed
  • Salt and pepper, to taste
  • Juice of ½ lime

Coconut Rice:

  • 1 cup jasmine rice
  • 1 ¾ cups water
  • ¼ cup unsweetened shredded coconut
  • 1 tablespoon coconut oil
  • Pinch of salt

Optional Garnish:

  • Fresh cilantro
  • Lime wedges
  • Toasted coconut flakes

Instructions

  1. Cook rice: Rinse rice. Combine rice, water, shredded coconut, coconut oil, and salt in a saucepan. Bring to boil, reduce heat, cover, simmer 15 min. Fluff with fork. Optional: lightly fry rice in coconut oil for crispy bits.
  2. Prepare stew: Heat coconut oil in a large pot over medium. Sauté onion until soft, add garlic and ginger for 1 min. Stir in curry powder and turmeric until fragrant.
  3. Add diced tomatoes and coconut milk, simmer gently. Stir in chickpeas, cook 5–7 min.
  4. Add kale, cook until wilted but vibrant. Season with salt, pepper, and lime juice.
