Green Bell Pepper & Chickpea Shakshuka
Simple and Delicious Veggie Fajitas

The star of the dish is the humble green pepper — often overshadowed by its red and yellow cousins, but absolutely irresistible when treated with a bit of heat. Charring green peppers brings out a deep, smoky sweetness that transforms their flavor and gives the whole bowl a satisfying backbone. The trick is simple: high heat, a touch of oil, and patience. Letting the peppers sit undisturbed in the skillet helps them develop those gorgeous caramelized edges.

Fluffy couscous acts as the perfect base, soaking up all the juices and adding just the right amount of comfort. Fresh herbs like parsley and mint brighten everything up, while cherry tomatoes and thinly sliced red onion add bursts of freshness and a bit of crunch. If you enjoy a salty finish, crumbled feta steps in beautifully, though the dish stands strong even without it.

And then there’s the lemon-tahini drizzle — the creamy, tangy, silky element that ties everything together. With just a few ingredients, the sauce mellows the smokiness of the peppers and lifts the herbs in the couscous, creating a perfectly balanced bowl.

It’s the kind of recipe that works for so many moments: a quick dinner, a beautiful lunch prep, or a colorful side for a gathering. Light but satisfying, simple yet full of personality. Enjoy every bright, vibrant bite!
