Green Goddess Pea Burgers with Lemon-Herb Drizzle

Share the love :)

Bright green pea burgers with fresh herbs, lemon zest, and a creamy lemon-herb drizzle—crispy, tender, and packed with vibrant, spring-forward flavor.

Who says veggie burgers have to be brown and forgettable? These Green Goddess Pea Burgers are proof that plant-based patties can be bright, fresh, and bursting with flavor. Peas, often relegated to side dishes, take center stage here, giving the burgers a naturally vibrant green color and a sweet, earthy base that pairs beautifully with herbs, citrus, and a touch of creamy feta.

The first bite is a revelation: crispy golden edges give way to a tender, fluffy interior, layered with the brightness of fresh mint, parsley, and green onions. Lemon zest adds a subtle zing that keeps the flavor light and springy, while feta (or nutritional yeast for a vegan version) adds richness and umami that makes these patties satisfyingly hearty. Rolled oats and a bit of breadcrumbs bind everything together without weighing it down, keeping the texture tender rather than dense.

The magic doesn’t stop at the burger itself. The accompanying lemon-herb drizzle elevates the whole experience, adding a tangy, creamy note that pairs beautifully with the sweet peas and fresh herbs. It’s simple to make but adds a professional touch, making these burgers feel like something you’d find on a gourmet menu rather than a weeknight dinner.

Serve these burgers on a toasted brioche or whole-grain bun, and add crisp lettuce, cucumber slices, and a few radish rounds for extra crunch and color. They’re perfect for a casual lunch, a weekend barbecue, or a light but satisfying dinner. Each bite is balanced and fresh, with sweet, tangy, herbaceous, and savory elements all working together.

If you’ve ever felt underwhelmed by veggie burgers, these Green Goddess Pea Burgers will change your mind. They’re easy to make, packed with flavor, and a stunning way to showcase peas as more than just a side dish. Crisp, tender, bright, and herbaceous—this recipe transforms humble green peas into something you’ll want on your plate again and again.
