Ingredients

For the Fritters

  • 1 cup cooked couscous (cooled)
  • 1 cup sweet green peas (fresh or thawed)
  • 2 eggs
  • ½ cup crumbled feta
  • ¼ cup chopped fresh parsley
  • 2 tablespoon chopped dill or mint
  • 2 green onions, sliced
  • 1 garlic clove, grated
  • ½ teaspoon lemon zest
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup flour (or chickpea flour for gluten-free)
  • Olive oil for frying

For the Lemon Yogurt Drizzle

  • ¾ cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • ½ teaspoon lemon zest
  • Salt & pepper to taste

Instructions

  1. Stir yogurt, lemon juice, zest, salt, and pepper in a bowl. Chill while preparing fritters.
  2. In a large bowl, mix couscous, peas, eggs, feta, parsley, dill or mint, green onions, garlic, lemon zest, salt, and pepper.
  3. Add flour and gently fold until the mixture holds together. Add more flour if needed.
  4. Heat a thin layer of olive oil in a skillet over medium heat. Scoop ¼-cup portions into the pan and flatten slightly.
  5. Cook 3–4 minutes per side until golden and crisp.
