Ingredients

For the Green Beans

  • 1 ½ lbs fresh green beans, trimmed and cut into 2-inch pieces
  • Salt for blanching water

For the Cheese Sauce

  • 3 tablespoon butter
  • 3 tablespoon flour
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar
  • ½ cup shredded mozzarella
  • ½ cup grated Parmesan
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika (optional)
  • ½ teaspoon black pepper
  • ½ teaspoon salt

For the Topping

  • 1 ½ cups crispy fried onions
  • ½ cup shredded cheddar (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add green beans and blanch 4–5 minutes. Drain and rinse under cold water; set aside.
  2. In a large skillet, melt butter over medium heat. Whisk in flour and cook 1 minute. Slowly whisk in milk and cream until thickened, 3–4 minutes.
