Ingredients

  • 2 medium eggplants
  • 3 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili flakes (optional)
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt & pepper, to taste
  • Crusty bread or crackers, for serving

Instructions

  1. Roast the eggplant: Preheat oven to 425°F (220°C). Pierce eggplants several times and place on a baking sheet. Roast 30–40 minutes, until skins collapse and flesh is very soft.
  2. Scoop & mash: Let eggplants cool slightly. Cut open and scoop the soft flesh into a bowl.
  3. Season: Add olive oil, garlic, lemon juice, smoked paprika, chili flakes, salt, and pepper. Mash until smooth and creamy, or blend for a completely silky texture.
  4. Finish with herbs: Stir in parsley and thyme. Taste and adjust seasoning.
