Ingredients

For the eggplant:

  • 1 medium eggplant, cut into ½-inch rounds
  • 2 tablespoon olive oil
  • 2 tablespoon breadcrumbs (panko works great for extra crispiness)
  • 1 teaspoon smoked paprika
  • 1 teaspoon za’atar
  • ½ teaspoon garlic powder
  • Salt & pepper, to taste

For the garlic yogurt sauce:

  • ½ cup Greek yogurt
  • 1 garlic clove, minced
  • 1 teaspoon lemon juice
  • Salt, to taste

Optional garnish:

  • Fresh parsley or mint, chopped
  • Pomegranate seeds for a pop of color

Instructions

  1. Prep the eggplant: Pat eggplant slices dry with a paper towel to remove excess moisture.
  2. Season and coat: In a small bowl, mix breadcrumbs, smoked paprika, za’atar, garlic powder, salt, and pepper. Brush eggplant slices with olive oil on both sides, then press them lightly into the breadcrumb mixture to coat evenly.
