Creamy avocado, zesty citrus, and crunchy pepitas make this quinoa salad a refreshing, flavorful, and healthy delight.

Ingredients

Salad:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 2 ripe avocados, diced
  • 1 large orange, peeled and segmented
  • 1 red bell pepper, diced
  • ½ small red onion, thinly sliced
  • ½ cup pepitas (pumpkin seeds)
  • 1 small bunch cilantro, roughly chopped

Dressing:

  • 3 tablespoon olive oil
  • Juice of 1 lime
  • 1 teaspoon honey or agave
  • ½ teaspoon chili flakes
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa thoroughly under cold water.
  2. Add quinoa and water (or broth) to a medium saucepan and bring water to a boil over medium-high heat.
  3. Reduce heat to low, cover, and simmer for 12–15 minutes.
  4. Remove from heat and let quinoa sit, covered, for 5 minutes.
  5. Fluff quinoa with a fork and let it cool slightly.
  6. Heat a dry skillet over medium heat.
  7. Add pepitas to the skillet.
  8. Toast pepitas for 3–4 minutes, stirring often, until fragrant and lightly browned.
  9. Transfer toasted pepitas to a plate to cool.
  10. In a small bowl, whisk olive oil, lime juice, honey, chili flakes, salt, and pepper.
  11. In a large mixing bowl, add the quinoa, avocado, oranges, red bell pepper, red onions, and cilantro.
  12. Pour dressing over the salad and gently toss together until well combined.
  13. Sprinkle toasted pepitas over the top just before serving.
