Roasting the cauliflower caramelizes its edges, giving it a satisfying texture that balances perfectly with the fresh, crisp vegetables in the bowl.

To assemble the bowls, start with a base of rice or cauliflower rice. Layer on avocado, julienned cucumber, and shredded carrot to create a sushi-inspired presentation without the rolling. The roasted cauliflower sits proudly on top, and a sprinkle of nori strips, toasted sesame seeds, and green onions adds both texture and visual appeal. Optional garnishes like pickled ginger or a drizzle of sriracha elevate the flavors even further.
