Ingredients

Cupcakes

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ground ginger
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup vegetable oil
  • ¼ cup applesauce
  • 1 teaspoon vanilla extract
  • 1 ½ cups grated carrots
  • ½ cup crushed pineapple, drained
  • ½ cup chocolate chips (semi-sweet or mini)
  • Optional: ½ cup walnuts, pecans, or raisins

Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • ½ cup butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  • Preheat oven to 350°F.
  • Line a 12-cup muffin pan with cupcake liners.
  • Whisk flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a large bowl.
  • Whisk eggs, oil, applesauce, and vanilla in a separate bowl.
  • Pour wet ingredients into dry ingredients and mix until just combined.
  • Fold in grated carrots and crushed pineapple.
  • Add chocolate chips and optional nuts or raisins.
  • Divide batter evenly among the liners.
  • Bake 18–20 minutes or until a toothpick comes out clean.

  • Combine cream cheese and butter together , either with a mixer or a food processor.
  • Add powdered sugar gradually and beat until smooth.
  • Mix in vanilla and salt.
  • Frost cupcakes generously with frosting.
