Ingredients
Broccolini “Fries”
- 1 lb broccolini, ends trimmed
- ½ cup rice flour (or all-purpose)
- ¼ cup cornstarch
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ½ cup cold club soda
- Neutral oil for shallow frying
Lemon–Miso Sauce
- 2 tablespoon white miso
- 1 tablespoon honey
- 2 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 tablespoon mayonnaise
- 1 teaspoon soy sauce
- 1 teaspoon grated fresh ginger
- 1–2 teaspoon water, if needed
Instructions
- Make the Sauce Whisk together miso, honey, lemon juice, lemon zest, mayo, soy sauce, and ginger. Add water to thin if necessary. Chill.
- Blanch the Broccolini Bring a pot of water to a boil. Blanch broccolini for 1 minute, then transfer to an ice bath. Pat completely dry.
- Prepare the Batter In a bowl, mix rice flour, cornstarch, garlic powder, paprika, and salt. Slowly whisk in cold club soda until thin and bubbly.
- Fry Heat ½ inch of neutral oil in a skillet over medium-high. Dip each broccolini spear into the batter and fry 1–2 minutes per side, until crisp. Drain on paper towels and sprinkle with salt.
- Serve Pile the broccolini “fries” onto a platter and serve immediately with the lemon–miso sauce.
