Roasted Beets
- 4 medium beets, trimmed
- 2 tablespoon olive oil
- Salt & pepper
Salad
- 4 cups arugula or mixed greens
- 2 oranges, peeled and sliced
- ⅓ cup goat cheese, crumbled
- ¼ cup toasted pistachios or walnuts
Honey-Herb Dressing
- 3 tablespoon olive oil
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar or white balsamic

Instructions
