Ingredients

Roasted Beets

  • 4 medium beets, trimmed
  • 2 tablespoon olive oil
  • Salt & pepper

Salad

  • 4 cups arugula or mixed greens
  • 2 oranges, peeled and sliced
  • ⅓ cup goat cheese, crumbled
  • ¼ cup toasted pistachios or walnuts

Honey-Herb Dressing

  • 3 tablespoon olive oil
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar or white balsamic
  • 1 teaspoon Dijon mustard
  • 1 tablespoon chopped mint or basil
  • Pinch of salt & pepper

Instructions

  1. Roast the Beets Preheat oven to 400°F (200°C). Wrap each beet in foil with a drizzle of olive oil, salt, and pepper. Roast 45–60 minutes, or until tender. Cool, peel, and slice.
  2. Make the Dressing Whisk olive oil, honey, vinegar, Dijon, herbs, salt, and pepper until smooth.
